Choosing to get to know Ardeh

Tahini, or Ardeh, is ground sesame seeds that have become liquid and has different names in different countries. In Iran, it is called Ardeh and is mostly used for breakfast, adding sugar and other ingredients to it and calling it Halva or Halva-ardeh. In English, it is called sesame seeds paste and the Arabs also call it Tahini.

Humans have known sesame for 4,000 years and have used sesame seed paste for nutrition and treatment of some diseases. After the 13th century, Arab countries showed a special interest in preparing and consuming ardeh, and cookbooks of that period contain many recipes in this regard. Currently, sesame and its related foods are widely consumed in Korea because it is a complete food with a significant amount of protein and fatty acids, salts and vitamins. In America, eating sesame products became popular in the 1940s, and today, due to the migration of many people from Africa and Middle Eastern countries who are accustomed to consuming ardeh, American people also tend to consume tahini.
